Ingredients
6tomatoeslarge, halved
1white onionmedium, quartered

2cupschicken broth
¼cupheavy cream
¼cupparmesan cheesegrated

Instructions
Preheat the air fryer to 400°F (204°C).
Prepare the vegetables: halve the tomatoes, quarter the onion and peel the garlic cloves.
Season the sliced vegetables with olive oil, sugar, salt and pepper.
Char the seasoned vegetables. First, line the air fryer basket with fitted air fryer liner and transfer the seasoned vegetables. Air fry for 15 minutes until the vegetables are tender and browned.
Transfer the charred vegetables to a large pot. Add the Italian seasoning, tomato paste, chicken broth, heavy cream, salt, and pepper. Using an immersion blender, blend until smooth. Alternatively, you can use a powerful countertop blender to pulverize those ingredients into a creamy tomato goodness.
Bring the pot to a boil, add grated Parmesan cheese, then simmer at medium heat for 5-10 minutes, stirring occasionally.
Serve the air fryer roasted tomato soup hot with extra Parmesan cheese and chopped basil on top. Pair it with garlic bread or cheese toast for an even more delicious meal. Enjoy!

If your air fryer doesn't have a preheating option, you can set the temperature to 400°F (204°C) and then let it cook for 4-5 minutes without food.
You can also skip preheating by adding 2-4 minutes to your cooking time.
Avoid preheating the air fryer with parchment paper in it, as the strong air flow may cause the paper to fly off and potentially touch the heating element, creating smoke. Instead, add your air fryer liner after your countertop convection oven finishes preheating.
If you don’t have an immersion blender at home, you can use a countertop blender to puree the ingredients.
Be careful when adding the chicken broth; add it incrementally to prevent overflowing and making a mess. You can add the remaining liquid when you transfer the mixture to the pot.
I used a 6-quart Instant Pot Vortex Plus to test the air fryer tomato soup recipe. Cooking time and temperature may vary depending on your air fryer and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
