2potatoesmedium-sized Yukon gold potatoes
1tablespoonavocado oilor olive oil
½teaspoongarlic powder
½teaspoonfresh rosemaryor ½ teaspoon dried rosemary

Instructions
Thoroughly wash and dice up your Yukon gold potatoes into 1-inch cubes. If desired, you can keep the skin on for extra flavor.
Preheat your air fryer to 400ºF (204ºC). (If you're using a 4-quart air fryer or smaller, the ideal cooking temperature is between 375°F to 380°F.)
In a large bowl, season the diced potatoes with olive oil, garlic powder, rosemary, salt and pepper.
Air fry diced potatoes for 12-15 minutes, shaking them halfway through. Start by carefully transferring them into the preheated air fryer, ensuring they are arranged in a single layer for even cooking. Roast the seasoned potato cubes until they turn golden brown and crispy.
Serve and enjoy your perfectly roasted air fryer cubed potatoes! Salt them to taste for a more savory finish.

If your air fryer doesn't have a preheating option, you can set the temperature to 400ºF (204ºC) and then let it cook for 4-5 minutes without food.
You can also skip preheating by adding 2-4 minutes to your cooking time. Increment gradually, to prevent overcooking your diced potatoes.
To ensure the potatoes are cooked through, prick them with a fork.
I used a 6-quart Instant Pot Vortex Plus to test the air fryer potato cubes. Cooking time and temperature may vary depending on your air fryer, the thickness of your potatoes and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
If you are using a 4-quart Ninja Foodi Air Fryer or any other compact air fryers from other brands, reduce the temperature to 375°F or 380°F (191°C-193°C).
For extra-crispy diced potatoes, use high-starch varieties such as russets. Next, soak your diced potatoes in cold water for at least 30 minutes and rinse them to remove excess starch. Finally, when cooking the freshly sliced potatoes in the air fryer, ensure they are spaced out evenly to promote better crisping. Avoid overlapping them, as you would with frozen fries.
