Potatoes are a versatile and magical food—they can be baked, mashed, roasted, pan-fried, or deep-fried—the possibilities are truly endless.
While potatoes are delicious on their own, they’re also fantastic for eating with other sauces and spreads, like ketchup and mayo. No form of potatoes works more perfectly in any scenario or has a better ratio of crispy outside to tender inside than diced potatoes.
A classic accompaniment to eggs or chicken, diced or cubed potatoes are easy to make (even easier in the air fryer) and are super satisfying.
We love these perfectly roasted air fryer diced potatoes with just about anything. They’re so quick to make (so much faster than the oven) and they come out so delicious every time!
In this recipe, we simply dice up some potatoes, toss them with oil and seasoning, air fry them, and voila! They’re done and ready to be enjoyed with a piece of chicken or wrapped up in a breakfast burrito!

Air Fryer Diced Potatoes Ingredients

You only need a few ingredients to make these perfect potatoes, and most of them are from your pantry!
- Yukon gold potatoes
- Avocado or olive oil
- Garlic powder
- Rosemary or dried rosemary
- Salt and pepper
In this recipe, we prefer to use Yukon gold potatoes for their high moisture content, which makes the finished potatoes really creamy and tender.
You can also use russets, which have a high starch content or red potatoes that are very sticky.
All types of potatoes will work in this recipe! However, If you want extra-crispy diced potatoes, the russets’ starchiness is the best for that.
Rosemary and potatoes are a match made in heaven! If you’re not a fan of rosemary, however, you can omit it altogether (or replace it with thyme or chives) and the potatoes will be equally as delicious.

How to Cook Diced Potatoes in the Air Fryer?
Making diced potatoes in the air fryer takes a fraction of the time it takes in the oven!! In 20 minutes or less, you’ll have diced potatoes that will be crisp on the outside, creamy on the inside, and all-around yummy.
Step 1: Slice your potatoes into 1-inch cubes.
Carefully cut the potatoes into 1-inch cubes. Start by cutting the potatoes into 1-inch thick slabs, then proceed to cut the slices into 1-inch strips. Finally, cut the strips into 1-inch cubes and transfer them to a medium bowl.
If desired, you can opt for larger-sized cubes, but keep in mind that you’ll need to adjust the cooking time accordingly to ensure they cook through properly.
At this point, if you’re using fresh rosemary, chop it into small pieces.
💡 Pro Tip: If you desire a crispy finish, consider using russet potatoes instead of Yukon gold. Additionally, soaking your sliced potatoes in cold water for 15-30 minutes to remove excess starch will significantly contribute to the overall crispiness of your side dish.
Step 2: Preheat your air fryer to 400ºF (204ºC).
If your air fryer doesn’t have a preheating option, you can set the temperature to 400ºF (204ºC) and then let it cook for 5 minutes without food.
You may also skip this step by adding 2-3 minute increments to your cooking time or until you achieve your desired finish.
✦ If you’re using a 4-quart air fryer, such as a Ninja Foodi or any other brand, reduce the temperature to 375°F (191°C) or 380°F (193°C). Compact air fryers generate more heat due to the proximity of the heating element to the food.
Step 3: Season the diced potatoes.
To the bowl with the potatoes, add avocado or olive oil, and toss to coat all the diced potatoes in the oil. Then, add the garlic powder, the chopped rosemary, salt and pepper and toss to coat the potatoes well in the seasoning.
Step 4: Air fry cubed potatoes for 12-15 minutes until golden.
When the air fryer is preheated, add the diced potatoes in a single layer and cook, tossing once halfway through, until the potatoes are golden brown on the outside and tender in the center, about 12-15 minutes.
✦ I used a 6-quart air fryer to test this recipe. Cooking time and temperature may vary depending on your air fryer and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
Step 5: Serve and enjoy your air fried potato cubes!
When the air fried diced potatoes are done cooking, carefully transfer them to a plate and serve immediately with the dipping sauce or dish of your choice!
To serve with flair, sprinkle on some more freshly chopped rosemary (or any herb that you have)! The herbs add great color and awesome fresh flavor!
My absolute favorite thing to do with these potatoes is wrap them up inside of a breakfast burrito!!
Use a large flour tortilla and add scrambled eggs, the diced potatoes and a handful of grated cheddar or Mexican blend cheese. Wrap up tightly into a burrito and add to an air fryer preheated at 375ºF.
Air fry for 1-2 minutes per side. Carefully transfer to a plate, slice in half and serve with salsa! I think it’s the best breakfast ever!
Freezing & Storage
Freezing: Allow the air fryer diced potatoes to cool completely before transferring to an airtight container or zip-top bag. Store in the freezer for up to 6 months. To reheat, thaw in the refrigerator overnight and then follow reheat instructions below.

Reheating: Preheat the air fryer to 400°F (204°C). Add the potatoes in a single layer and air fry, tossing occasionally, until hot and re-crisped, about 2-3 minutes. For an extra crispy finish, you can also spray the potatoes with a little bit of high-heat cooking oil spray before air frying.
