Ingredients

For the Pork Loin:

  • 2 pounds pork loin
  • 1 tablespoon avocado oil

Dry Rub:

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Honey Garlic Sauce:

  • 1/4 cup unsalted butter melted
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon soy sauce
  • 1 tablespoon fresh parsley chopped

Instructions

  • Preheat your air fryer to 350ºF (177ºC) for 5 minutes.
  • Prepare the dry rub. In a small bowl, combine smoked paprika, onion powder, dried thyme, dried rosemary, salt, and pepper to create a dry rub.
  • Season the pork loin. Pat the pork loin dry to remove excess moisture. Rub the pork loin with avocado oil, ensuring an even coating. Then, generously coat the pork with the prepared dry rub, pressing it on all sides.
  • Roast pork in the air fryer. Put the pork in the air fryer. Then, air fry at 350ºF (177ºC) for 45 - 60 minutes. Make sure to flip halfway through the cooking time. For fully and safely cooked pork, the internal temperature should reach 145ºF (63ºC).
  • Prepare the honey garlic sauce. In a small saucepan over low-medium heat, melt the butter. Stir in the honey and minced garlic, whisking until the honey melds with the butter. Add the freshly squeezed lemon juice and soy sauce, adjusting with a touch of salt to taste. Simmer for 3 - 5 minutes, letting the flavors marry together beautifully. Introduce the chopped parsley and stir well to infuse the flavors.
  • Let the pork rest. Once the pork loin reaches the desired temperature, carefully remove it from the air fryer and cover it with foil. Let it rest for about 5 - 10 minutes.
  • Once rested, slice the pork loin into thin slices and arrange them on a serving platter.
  • Drizzle honey garlic sauce. Drizzle the prepared honey garlic sauce over the sliced pork loin.
  • Serve the air-fried pork loin roast and enjoy! Sprinkle fresh chopped parsley over the pork loin slices for extra flavor and a pop of color. Serve with your favorite sides, like roasted diced potatoes or creamy mashed potatoes.

Notes

  • Let the pork loin sit at room temperature for 30 minutes before cooking. It ensures even cooking, leading to the best damn pork loin roast.
  • At 140ºF (60ºC), take out pork from the air fryer. Carryover cooking will safely hit an internal temperature of 145ºF (63ºC). This is one of the secrets to achieving the juiciest pork loin roast. 
  • Considering that cooking time varies depending on the meat's thickness (and your air fryer's specs), always check with a meat thermometer if your pork is cooked thoroughly. The pork's safe internal temperature is a minimum of 145ºF (63ºC).
  • If your air fryer doesn't have a preheating option, you can set the temperature to 380°F (193°C) and then let it cook for 4-5 minutes without food. 
  • You can skip preheating by adding 2-4 minutes to your cooking time. Increment gradually to prevent burning the pork loin roast.
  • I used a 6-quart (air fryer) to test the pork loin roast. Cooking time and temperature may vary depending on your air fryer and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
