Roast pork in the air fryer. Put the pork in the air fryer. Then, air fry at 350ºF (177ºC) for 45 - 60 minutes. Make sure to flip halfway through the cooking time. For fully and safely cooked pork, the internal temperature should reach 145ºF (63ºC).
Prepare the honey garlic sauce. In a small saucepan over low-medium heat, melt the butter. Stir in the honey and minced garlic, whisking until the honey melds with the butter. Add the freshly squeezed lemon juice and soy sauce, adjusting with a touch of salt to taste. Simmer for 3 - 5 minutes, letting the flavors marry together beautifully. Introduce the chopped parsley and stir well to infuse the flavors.
Let the pork rest. Once the pork loin reaches the desired temperature, carefully remove it from the air fryer and cover it with foil. Let it rest for about 5 - 10 minutes.
Once rested, slice the pork loin into thin slices and arrange them on a serving platter.
Drizzle honey garlic sauce. Drizzle the prepared honey garlic sauce over the sliced pork loin.
Serve the air-fried pork loin roast and enjoy! Sprinkle fresh chopped parsley over the pork loin slices for extra flavor and a pop of color. Serve with your favorite sides, like roasted diced potatoes or creamy mashed potatoes.
