¼teaspoonsalt
⅛teaspoonpaprika
⅛teaspoonpepperfreshly ground
1/2tablespoonAvocado oilor olive oil
1teaspoonparsleyfor garnish
Instructions
Preheat your air fryer to 400°F (204°C). If your air fryer has a capacity of 4 quarts or smaller, please see the note for more info.
Slice the zucchini and yellow squash into crescents, about 1/2" thick. Make sure they are similar in thickness for even cooking.
Season the vegetables. Place the zucchini and yellow squash in a bowl and drizzle them with olive oil. Toss the vegetables gently to coat them evenly. Sprinkle the garlic powder, salt, paprika, and pepper onto the vegetables, and toss again to ensure they are well-coated with the seasonings.
Air fry squash and zucchini for 6-8 minutes. Start by transferring the seasoned zucchini and yellow squash to the air fryer basket, ensuring they are spread out in a single layer. Toss the basket halfway through the cooking process for even browning and cooking. Cook until they are slightly golden and tender.
Once the zucchini and yellow squash are cooked to your liking, they are ready to be served. Enjoy this flavorful and healthy side dish prepared in the air fryer!
Notes
For 4-quart air fryers and smaller, reduce the cooking temperature to 380°F (193°C). They generate more heat because of the heating element's proximity to the food.
If your air fryer doesn't have a preheating option, set your desired temperature and then let it cook for 4-5 minutes without food.
I used a 6-quart Instant Pot Vortex Plus to test the Air Fryer Zucchini and Squash recipe. Cooking time and temperature may vary depending on your air fryer and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
To test for doneness, you can use a fork to poke the squash. If it goes through with slight resistance, it's ready to be served.
The texture should be soft but not mushy. Additionally, you can taste a piece to ensure it is cooked to your liking.
