Instructions
Create the breading station. In separate shallow bowls, prepare your coating ingredients: one with a mixture of all-purpose flour and cornstarch, another with beaten eggs, and a third with a combination of grated Parmesan cheese, panko breadcrumbs, dried parsley, garlic powder, and paprika.
Season the pork. Pat the pork chops dry with paper towels. Season both sides with salt and black pepper. Set aside.
Preheat your air fryer to 400ºF (200ºC) for about 5 minutes.
Bread the pork chops. Dredge each pork chop in the flour-cornstarch mixture, shaking off any excess, then into the beaten eggs, and finally into the Parmesan-breadcrumb mixture. Press gently to adhere to the coating.
Air fry the parmesan crusted pork chops. Place the breaded pork chops in the air fryer in a single layer without overcrowding. Then, spray the pork chops with avocado oil. Air fry at 400ºF (200ºC) for 5 - 6 minutes on each side, for a total of 10 - 12 minutes.
Check for doneness. To ensure the pork chops are fully cooked, use an instant-read thermometer. The internal temperature should reach 145ºF (63ºC) for juicy and tender results.
Once the pork chops are done, remove them from the air fryer and rest for 3 - 5 minutes.

Notes
Considering that cooking time varies depending on the meat's thickness (and your air fryer's specs), always check with a meat thermometer if your pork is cooked thoroughly. The pork's safe internal temperature is a minimum of 145ºF (63ºC).
You can remove the pork from the air fryer at 140ºF (60ºC). The resting time will allow its internal temperature to rise, called carryover cooking. Doing so will also yield the juiciest results.
If your air fryer doesn't have a preheating option, you can set the temperature to 380°F (193°C) and then let it cook for 4-5 minutes without food.
You can skip preheating by adding 2-4 minutes to your cooking time. Increment gradually to prevent burning the parmesan crusted pork chops.
I used a 6-quart (air fryer) to test the parmesan crusted pork chops. Cooking time and temperature may vary depending on your air fryer and the number of servings you are making. For optimal results, begin with the lower end of the suggested cooking time.
